Alternativelly, existing bookings can be entered manually to block the dates at other channels, manually added bookings are not updated if modified by the channel.
If you want to not allow channel modifications by default you can change the setting for "Allow Channel Modifications" value" in SETTINGS->CHANNEL MANAGER.
