You have two options to set an extra person price:

a) Set "Maximum guests" to the minimum number of guests you charge for and add the extra person price with a positive value.

b) Set "Maximum guests" to the "Maximum Room Capacity" and add the extra person price with a negative value. In this case the room price will be lowered by this amount if the number of guests is lower than the maximum occupancy.
