1. Open the rates for all periods you want to close at  the channel and untick the prices (“Summary” tab of the rate).  
You can set the number of accepted bookings in SETTINGS->CHANNEL MANAGER->CHANNEL INVENTORY to zero for the period you want to close.  


2. Go to  SETTINGS->CHANNEL MANAGER->BOOKING.COM/EXPEDIA/AGODA (for example) and click "Update" to push the change through.
3. Check in your channels extranet that the rooms are closed.
4. Go go your rates again tick the prices and also untick the channel you want to close in the "Channels" tab of the rates and SAVE the change. (This will reactivate the rates for your booking page).
If you are also using daily prices make sure they are not activated for channel management (SETTINGS->PROPERTIES->ROOMS->DAILY PRICES).
